If you've seen 'A5 Wagyu' on a menu or in a butcher's window and wondered what the fuss is about, you're in the right place. A5 is the highest grade of beef awarded in Japan, and it's regarded by many as the finest beef in the world. Here's what that grade actually means — and how to make the most of it at home.
What the 'A' and the '5' mean
Japanese beef is graded on two scales. The letter (A, B or C) refers to yield — how much usable meat comes off the carcass — with A being the highest. The number (1 to 5) refers to quality, judged across four factors: marbling, meat colour and brightness, firmness and texture, and fat colour and quality.
To be graded A5, a carcass has to score the very top mark across all of those quality factors. It's the rarest and most sought-after grade, which is why genuine A5 commands a premium.
It's all about the marbling
The thing that sets Wagyu apart is intramuscular fat — the fine white threads running through the muscle, known as marbling. Wagyu marbling is measured on the Beef Marble Score (BMS), which runs from 1 to 12. A5 Wagyu sits right at the top, typically BMS 10 to 12.
That fat melts at a lower temperature than other beef fat, which is why A5 Wagyu has that famous buttery, almost melt-in-the-mouth texture. It also means it's extraordinarily rich.
How much should you eat?
Because it's so rich, you need far less A5 Wagyu than regular steak. As a guide, 100–150g per person is plenty as a main — and even less if you're serving it as part of a bigger meal or a tasting. Treat it as a luxury, not a slab.
How to cook A5 Wagyu
Keep it simple and let the beef shine. Bring it to room temperature, season with flaky salt, and use a very hot cast-iron pan with no added oil — the Wagyu renders plenty of its own fat. Sear briefly (1–2 minutes per side for thin cuts), rest, and slice against the grain.
Never cook past medium. The whole point of A5 is the fat, and overcooking renders it away. If in doubt, undercook slightly — you can always add heat.
